Our Weekend

I had to work this Saturday, so our weekend was cut pretty short. We did manage to have some quality family time though and I got some baking in too!

Saturday evening we took Emma's new stroller out for a spin! It is the first piece of "equipment" that we have specifically purchased for her, so naturally....it's PINK!

Almost everyday we take a family walk after dinner. Connor switches off between riding his bike and his scooter. Emma Kate prefers the stroller to the carrier. Dominic is very bored with family walks these days and I make him get out "with us," so he takes off with our dog, Libby, for a run instead. (I think he is secretly visiting a girlfriend for a few minutes till we get home:)



Today after church, I tried out a new recipe for Pumpkin Bread courtesy of The Food Network:

Ingredients:

- 3 cups sugar (I know-A LOT!)

- 1 cup vegetable oil

- 4 eggs, lightly beaten

- 16 oz canned unsweetened pumpkin

- 3 1/2 cups flour

- 2 tsp salt

- 2 tsp baking soda

- 1 tsp baking powder

- 1 tsp nutmeg
- 1 tsp allspice
- 1 tsp cinnamon (PLEASE...if someone knows why this thing does the
- 1/2 tsp cloves random weird spacing like this...tell me!!!)
- 2/3 cup water
Directions:
Preheat oven to 350 degrees. Butter and flour 2 9x5 loaf pans. Stir together sugar and oil. Stir in eggs and pumpkin. Combine dry ingredients in separate bowl. Blend dry ingredients and water into wet mixture, alternating. Divide batter between two loaf pans. Bake for 30 to 40 minutes or until cake tester comes out clean. Let stand 10 minutes. Remove from pans and cool.
I found this really cute muffin pan at Crate & Barrel, so I wanted to use that...I used the same recipe and baked them for 20 minutes at 350 degrees.
Then I brushed them with an Orange Glaze:
1 cup powdered sugar
1/4 cup undiluted orange juice concentrate
1/8 tsp allspice
Here they are! A pumpkin, maple leaf, and acorn!
I will have to use these for an event sometime soon.

I worked on the pumpkin bread while watching the Giants game with Connor and Jeff.

And finally...I complete most days with either a glass of wine or a cup of tea.

Tonight the tea won.
